Easy Turtle Sheet Cake Cookies
A cake mix is transformed into a soft and delicious chocolate cookie that is full of chopped pecans and mini chocolate chips but it is the easy homemade caramel frosting that takes these awesome cookies over the top.

Cookies
- 1-15.25 ounce box chocolate cake mix
- ⅓ cup vegetable oil
- 2 eggs
- ⅔ cup pecans chopped
- ¼ cup mini chocolate chips
Caramel Frosting
- ½ cup heavy cream or half and half
- 6 tablespoons butter
- 1 cup brown sugar packed
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
Optional Toppings
- ¼ cup dark chocolate melting wafers melted
- ¼ cup pecans halves & chopped
Cookies
Preheat oven to 350 degrees.
Combine cookie ingredients in large bowl and mix until completely incorporated. NOTE: Dough will be thick.
Add chopped pecans and mini chocolate chips to cookie dough and stir in by hand until evenly distributed.
Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a silicone mat {or parchment} lined cookie sheet.
Bake for 9-11 minutes, remove from oven and let cool on cookie sheet for 4-5 minutes before moving them to a cooling rack. Repeat until all of the dough is baked.
Caramel Frosting
Combine the first 3 frosting ingredients in a small saucepan over medium heat and whisk until the mixture has melted. Remove from heat, add vanilla extract and powdered sugar, whisk until smooth. If you have a problem getting the frosting smooth put it back on the heat for a minute or so and whisk. The heat should remove any lumps.
Spoon frosting over cookies. Use a knife or spoon to move excess frosting and be sure that each cookie is completely covered. Allow the frosting to set up for a couple of minutes.
If desired, drizzle melted chocolate over the top of each cookie. While the chocolate is still wet, add pecan halves or chopped pecans to the top of each cookie.
Let frosting and chocolate set completely and serve. Keep your Texas sheet cake cookies in an air tight container at room temperature for up to 3 days.
