- 2 pounds ground beef {preferably 93% lean or leaner}
- 1 packet taco seasoning
- 1-15 ounce can black beans {drained}
- ½ cup corn {frozen or canned}
- 1 ½ cups salsa
- 2 cups cheddar cheese {shredded}
- 9 ½ ounce bag Doritos Cheese Chips {crushed}
Preheat oven to 375°. Prepare a 9x13 pan by spraying it with nonstick cooking spray. Set it aside.
Brown ground beef in a large skillet over medium-high heat until no longer pink. Drain fat {if any}. Add taco seasoning, black beans, corn and salsa to browned ground beef. Stir to combine, simmer for a couple of minutes and remove from heat.
Add ⅓ of the crushed Doritos chips to the bottom of the prepared 9x13 dish. Top the crushed chips with half of the meat mixture and ⅓ of the shredded cheese. Continue by adding ⅓ of the crushed Doritos chips to the top of the shredded cheese, followed by the remaining ground beef mixture and ⅓ of the shredded cheese. Top with the remaining Doritos chips and remaining shredded cheese.
Cover the top of the casserole with foil and bake for 20 minutes. After 20 minutes, remove the foil and continue to bake for an additional 10-15 minutes or until the cheese is totally melted and everything is heated through.
Remove from the oven and serve with your favorite toppings. Refrigerate leftovers for up to 3 days.
