Easy Doritos Casserole with Ground Beef

Doritos Chips are crushed and combined with a delicious ground beef mixture into a casserole that is baked to perfection. Doritos Casserole is a taco casserole that can be topped with taco toppings and is sure to be a family favorite.

Ingredients

  • 2 pounds ground beef {preferably 93% lean or leaner}
  • 1 ounce taco seasoning
  • 15 ounces black beans {drained}
  • ½ cup corn {frozen or canned}
  • 1 ½ cups salsa
  • 2 cups cheddar cheese {shredded}
  • 9 ½ ounces Doritos Cheese Chips {crushed}

Instructions

  • Preheat the oven to 375°. Prepare a 9x13 pan by spraying it with nonstick cooking spray. Set it aside.
  • Brown ground beef in a large skillet over medium-high heat until no longer pink. Drain fat {if any}. Add taco seasoning, black beans, corn and salsa to browned ground beef. Stir to combine, simmer for a couple of minutes and remove from heat.
  • Add ⅓ of the crushed Doritos chips to the bottom of the prepared 9x13 dish. Top the crushed chips with half of the meat mixture and ⅓ of the shredded cheese. Continue by adding ⅓ of the crushed Doritos chips to the top of the shredded cheese, followed by the remaining ground beef mixture and ⅓ of the shredded cheese. Top with the remaining Doritos chips and remaining shredded cheese.
  • Cover the top of the casserole with foil and bake for 20 minutes. After 20 minutes, remove the foil and continue to bake for an additional 10-15 minutes or until the cheese is totally melted and everything is heated through.
  • Remove from the oven and serve with your favorite toppings. Refrigerate leftovers for up to 3 days.

Notes

  • Use ground beef with 93% fat.  If you use ground beef with more fat be sure to remove the extra grease.
  • Don't crush the Dorito chips too small.  If the pieces are too small they will get soggy easier.
  • Grate your own cheese for the best melting.  
  • Be sure to remove the foil from the Doritos casserole after 20 minutes and then allow the casserole to continue cooking.  This will allow the casserole to brown slightly and finish baking perfectly.
  • Covered tightly with plastic wrap, this Doritos casserole can be refrigerated for up to 3 days.
