Total Time45 minutes mins
Cookie
- 1-15.25 oz. box chocolate cake mix {I like chocolate fudge}
- 2 eggs {whisked}
- ⅓ cup vegetable oil
- ⅔ cup mini M&M candies
Frosting
- ½ cup butter
- 2 tbsp cocoa
- 3 tbsp milk {I used 1%}
- 2 ½ cups powdered sugar
Cookies
Preheat oven to 350 degrees.
Combine cookie ingredients in large bowl and mix until completely incorporated. I like to use a hand held mixer but stirring the ingredients by hand works too. NOTE: Dough will be thick.
Add mini M&M's to the dough and stir in with spoon until they are evenly incorporated.
Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a silicone {or parchment} lined cookie sheet.
Bake for 9-11 minutes, remove from oven and let cool on cookie sheet for at least 5 minutes before moving them to a cooling rack. Repeat until all of the dough is baked.
Frosting
Combine the butter, cocoa and milk in a medium saucepan over medium heat and whisk until the butter has melted. Remove from the heat, add powdered sugar and whisk until smooth.
Spoon a heaping teaspoon of frosting over each of the cookies. Use the back of the spoon to spread the frosting out. Sprinkle the top of each cookie with a few additional mini M&M candies before frosting has set up. NOTE: Working on one or two cookies at a time works best.
Let frosting set and serve. Keep your sheet cake cookies in an air tight container at room temperature for up to 3 days.
