Ingredients

  • 2 tbsp olive oil
  • 1-1 1/4 lbs. ground beef
  • 2 cloves garlic {minced}
  • 1-15 oz. can black beans {drained & rinsed}
  • 1-10 oz. can Rotel
  • 1 cup corn
  • 2 cups cooked rice
  • 1-19 oz. can enchilada sauce
  • 1/2 tsp chili powder
  • 1 tsp cumin
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper

Topping Ideas: shredded cheese, lettuce, tomato, avocado, cilantro, olives, sour cream, tortilla strips

    Instructions

    • In a large skillet over medium high heat, cook onions in olive oil until they are softened. Add ground beef and cook until no longer pink. Stir in garlic and cook for 30 seconds.
    • Once the ground beef is cooked through add black beans {drained and rinsed} and can of Rotel, stir to combine. Add corn to mixture and combine.
    • Next add cooked rice and stir. Finally add in enchilada sauce and seasonings. Stir until everything is combined and cook for 5-10 minutes.
    • Serve with your favorite toppings and ENJOY!
