Cake Mix Cookies: Chocolate Sandwich Cookies with Cream Cheese Filling

Easy chocolate cake mix cookies are made extra special when sandwiched together with homemade cream cheese frosting.

Ingredients

Cookies

  • 1 box chocolate cake mix
  • 2 eggs {whisked}
  • 1/3 cup oil {I used vegetable}
  • 1/2 cup granulated sugar

Cream Cheese Frosting

  • 1/4 cup butter {softened}
  • 4 oz. cream cheese {softened}
  • 1 1/2-2 cups powdered sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°. In a medium bowl combine cake mix, eggs and oil. Mix with a hand held mixer {or by hand} until everything is combined. Note: The mixture will be thick.

  2. Fill a small bowl with granulated sugar. Using a cookie scoop, scoop mounds of dough. Roll each mound in sugar to coat and place onto a parchment or Silpat lined baking sheet. Bake for 8-9 minutes. Cool on baking sheet for 10 minutes before moving to a cooling rack. Note: Do not over bake cookies. They will look under baked but will continue to set up as they cool on the cookie sheet.

  3. In a medium bowl mix together the butter and cream cheese with a handheld mixer {or by hand} until smooth. Add vanilla and enough powdered sugar to get a good consistency. Put frosting in a piping or Ziploc bag and cut off the end.

  4. Turn half of the cake mix cookies over and pipe frosting onto each one. Start on the outside and continue in a circle {working your way to the middle} until the cookie is covered. Top with another cookie. Continue until all of the cookies have been frosted and sandwiched.

  5. Store your cake mix cookies in an airtight container for up to 5 days or freeze for up to 3 months.
