Healthy Mediterranean Salad with Chickpeas

A Summer Salad recipe that just happens to be a healthy one.  This Mediterranean Salad with Chickpeas is light, refreshing and just what your summer ordered.

  • 1 1/2 cups orzo pasta
  • 1 can chickpeas {drained & rinsed}
  • 10-12 cherry tomatoes {quartered or halved}
  • 1/2 English cucumber {diced}
  • 1/4 red onion {thinly sliced}
  • 1/4 cup feta or Queso Fresco cheese {crumbled}
  • 1 tbsp fresh parsley {chopped}
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 cup balsamic vinaigrette


  1. Cook orzo according to package directions.

  2. Add cooked orzo to bowl with rinsed and drained chickpeas.

  3. Then add the prepared vegetables and parsley to orzo/chickpea mixture.

  4. Finally add seasonings, cheese and dressing.

  5. Stir to combine, being sure that everything is covered in dressing.

  6. Serve your healthy mediterranean salad immediately or refrigerate and serve later. Refrigerates well for up to 4 days.
