Easy American Flag Fruit Pizza Dessert

- 1 tube sugar cookie dough {16.5 ounces}
Cheesecake Frosting
- 8 ounces cream cheese {softened}
- 1 cup powdered sugar
- 1 cup whipped topping
Fruit
- sliced strawberries
- blueberries
Preheat the oven for 350°. Spray a pizza pan with nonstick cooking spray.
Slice the sugar cookie dough into 20 rounds {keep ends for the star}. Place the rounds on the prepared baking sheet in a circle. Press the cookies together to create a crust.
Bake crust for 18-22 minutes or until the middle is baked through and it is golden brown. Remove from the oven and allow the cookie crust to cool completely.
While the cookie is cooling, take the ends of the sugar cookie dough and add a teaspoon {or two} of flour. Combine and roll out into a circle. Cut out a star using a cookie cutter or a knife. Place onto a baking sheet and bake for 8-10 minutes. If the cookie spreads too much, reuse the star cookie cutter to get a nice star shape.
Cheesecake Frosting and Assembly
Once the crust is cool, add the cream cheese to a medium bowl and mix until creamy using a hand held {or stand} mixer. Add the powdered sugar and mix until smooth. Finally, add the whipped topping and gently mix into the cream cheese.
Add a thin layer of cream cheese frosting over the top of the cookie {keep remaining frosting for the stripes and border}. Add blueberries to the upper left hand corner of the pizza. Then add stripes of sliced strawberries to create an American flag.
Add the remaining frosting to a piping bag with a star tip {or a zipper bag}. Pipe in between the strawberry lines and around the border of the cookie. Top the blueberries with the star cookie. Serve or store in the refrigerator for up to 3 days.
- Make sure that the sugar cookie dough is cold. The chill in the dough will ensure that it doesn't spread too much while baking.
- While the cookie is baking, prepare the fruit. Wash the fruit and slice strawberries before decorating so the process goes quickly when creating the flag design.
- If you don't have a piping bag and star tip using a zipper bag. Cut a triangle from the corner of one side of the bottom of the bag and fill it with frosting.
- Use your favorite fruit to decorate the top of the cookie pizza. Fresh raspberries, blackberries, watermelon or grapes would all be delicious.
- To store this flag fruit pizza, place the cookie onto a large tray and cover tightly with plastic wrap. Store in the refrigerator for up to 3 days.
- The cookie {or crust} part of this recipe can easily be frozen for up to 3 months. I do not suggest freezing it with the fresh fruit or frosting.
- Allow a cookie from the fridge to come to room temperature before serving. Doing so will give you a soft cookie.
