Easy Sprinkle Sugar Cookies with a Cake Mix

A delicious cake mix sugar cookie is made even better when the dough is filled with colored sprinkles and baked to soft perfection.

Ingredients

  • 1 box white cake mix {15.3 ounces}
  • 2 Tablespoons cornstarch
  • 1 cup all purpose flour
  • ½ cup butter {softened}
  • ½ cup butter flavored shortening
  • 3 eggs
  • 1 teaspoon vanilla extract
  • ¾ cup rainbow sprinkles

Instructions

  • Preheat the oven to 350°.
  • Combine the white cake mix, cornstarch and all purpose flour in a large bowl. Whisk the ingredients together to combine.
  • Add the softened butter, shortening, eggs, vanilla extract and almond extract to the dry mixture and cream together using a hand held {or stand} mixer. The dough will be a nice thick consistency.
  • Add sprinkles to the cookie dough and gently stir them into the dough until they are evenly distributed.
  • Use a medium cookie scoop to measure out into your hand and form the cookie dough mounds into round discs. Place the cookie dough discs onto a silicone mat {or parchment} lined baking sheet baking 8 cookies at a time.
  • Bake for 8-10 minutes or until the cookies are baked through but not over baked. Remove from the oven and allow them to cool completely on the baking sheet. Continue baking the 2nd and 3rd batches. Store the cookies in an airtight container at room temperature for up to 3 days.

Notes

  • Change up the color and shape of sprinkles that you use to go with the season, occasion or feel that you are wanting for the cookies.
  • Add a little frosting to the top of each cookie for an extra wow factor.
  • These cookies also freeze well for up to 3 months.
