Ingredients

Brownie Bundt Cake

  • 1 box chocolate cake mix {15.25 ounces}
  • 1 box chocolate fudge brownie mix {18.3 ounces}
  • 4 large eggs
  • 1 ¼ cups water
  • 1 cup vegetable oil
  • ¼ cup sour cream

Toppings/Decorating Items

  • 1 tub frosting {16 ounces}
  • 2 Rice Krispie Treats
  • ½ cup Oreo cookie crumbs
  • 15 pumpkin candies
  • 3 ghost Peeps

Instructions

  • Preheat oven to 350°. Prepare Bundt pan by spraying it liberally with nonstick cooking spray.

Brownie Bundt Cake

  • In a large bowl combine the cake and brownie mixes. Whisk them together until evenly combined. To the mixes add eggs, water, oil and sour cream. Use a hand held {or by hand} mixer to mix the ingredients together until you have a nice smooth cake batter.
  • Pour the cake batter into your prepared Bundt pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out with only a few crumbs {not any raw batter}. Place the cake on a cooling rack and allow the cake to cool for at least 10 minutes.
  • After 10 minutes, use a knife {or skewer} to run along the edge of the cake and loosen up any areas that may have stuck. Turn the cake out onto a cake plate and allow the cake to continue to cool.

Decorating

  • Once the cake is cool, cut the two Rice Krispie Treats down and place them into the middle of the bundt cake. Note: Fill the middle of the bundt cake.
  • Now take the frosting and remove the foil top completely. Place the frosting in the microwave for 15 seconds and stir. Continue 10 second intervals until the frosting is pourable but not liquid. Pour it over the top of the cake {even over the middle, covering the top of the Krispie Treats}. Note: It may not take the entire can of frosting.
  • Pour the Oreo cookie crumbs over the top of the cake, keeping them in the middle area. You want to cover where the cake and Krispie Treats meet on the edges. Place three ghost Peeps onto a skewer {cut it down if needed} and dunk the bottom of the skewer in the frosting before placing into the middle of the cake. I like to offset them but you can place them however you prefer as long as it is in the Krispie treat area. Add the candy pumpkins around the skewers and around the edge of the cake. Serve and enjoy.

Notes

  • Make sure to microwave the frosting for only 15-second increments. If you microwave it too much, it will become like water and not become a glaze like you want it to be.
  • Wrap your Halloween Bundt Cake in plastic wrap and then store it in the refrigerator for up to 4 days.
  • To freeze a bundt cake, wrap it in plastic wrap and then in foil. The cake will stay fresh for up to 6 months.
