Red White and Blue Thumbprint Cookies with a Cake Mix

Ingredients

  • 1 box red velvet cake mix {15.25 ounces}
  • 2 eggs
  • cup vegetable oil
  • ½ cup blueberry jam
  • ¼ cup white melting chocolate
  • 2 Tablespoons star sprinkles

Instructions

  • Preheat the oven to 350°.
  • Combine the red velvet cake mix, eggs and vegetable oil. Mix using a hand held {or stand} mixer until you have a thick dough.
  • Use a medium cookie scoop and scoop mounds of dough into your hand. If the dough is too sticky, flour your hands and roll the dough into a smooth ball. Place the cookie dough mounds onto a silicone mat {or parchment} lined baking sheet. Make an indentation in the middle of each cookie using your thumb.
  • Fill the indentation with about a teaspoon of blueberry jam. Bake for 9-11 minutes or until the cookies are set. Remove from the oven and allow the cookies to cool completely on the baking sheet.
  • Once the cookies are completely cooled, melt the white chocolate in the microwave for 30 seconds. Stir and continue in 15 second increments until totally smooth. Add the melted white chocolate to a piping or zipper bag and cut a small triangle from the bottom. Drizzle every cookie with a few lines of white chocolate and work quickly, top with as many star sprinkles as you would like. Allow the chocolate to set up and serve. Store leftovers in an airtight container at room temperature or in the refrigerator for 2 days.
