Peanut Butter Cake

  • 1-15.25 oz. box yellow cake mix
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 cup all purpose flour
  • 1 cup creamy peanut butter
  • 1 ½ cups water
  • 1 tablespoon vegetable oil
  • 3 eggs

Peanut Butter Frosting

  • ½ cup butter
  • cup creamy peanut butter
  • 6 tablespoons milk {I used 1%}
  • 2 ½ cups powdered sugar
  • 1 teaspoon vanilla extract


Peanut Butter Cake

  • Preheat the oven to 350 degrees.
  • Spray Bundt pan liberally with nonstick cooking spray.  Set aside.
  • To prepare cake batter:  Combine cake mix, brown sugar, granulated sugar and flour in a large bowl, whisk ingredients together to remove any lumps. Add peanut butter, water, oil and eggs to the dry ingredients and stir either by hand or with hand held mixer until well combined.  Pour prepared batter into greased Bundt pan.
  • Bake in preheated oven for 45-50 minutes or until toothpick inserted in center comes out with only a few crumbs.  Cool in pan for 10 minutes and then invert onto cake plate and cool completely.

Peanut Butter Frosting

  • Once the cake is almost completely cooled, combine the first 3 frosting ingredients in a small saucepan over medium heat. Whisk until the mixture has melted but not boiling.  Remove from heat, add powdered sugar and whisk until smooth. Add vanilla extract and stir until completely incorporated.
  • Pour frosting over cooled Bundt cake.
  • Let frosting set and serve.  Keep covered with plastic wrap and refrigerated for up to 4 days.
