Pancake Mix Coffee Cake

This super simple Pancake Mix Coffee Cake Recipe starts with pancake mix and is topped with buttery crumb topping, this easy cake is breakfast perfection!

In order to get a smooth batter, use a whisk or sift the pancake mix and sugar together to remove any imperfections.

In a separate bowl combine the milk, eggs, sour cream and vanilla extract.  Whisk them together well.  Add to the dry ingredients.

Thin batter with additional milk if needed. Pour 1/2 into a 9x13 pan and spread into an even layer.

Combine pancake mix, brown sugar, cinnamon, nutmeg, salt and butter in a medium bowl.  Cut the butter into the dry ingredients using a pastry blender or fork.

Top coffee cake batter with 1/2 of the crumb topping and the rest of the batter.  Spread into an even layer.

Add the rest of the crumb topping to the top of the cake and bake in a 350 degree oven for 30-35 minutes.
