Boston Cream Pie Cookie Bites

The traditional flavors of the Boston Cream Pie are transformed into this fun cookie cup that is super simple because it is made with a cake mix.

Combine cake mix, eggs and butter with a hand held mixer.  The dough will be thick and wonderful.

Use a small cookie scoop and scoop mounds of dough into a mini muffin pan that has been sprayed with nonstick spray.  Use your fingers to press down slightly.

Bake in a 350 degree oven for 9-11 minutes. Immediately use an offset knife to loosen cookie from cup.  Then take a tart shaper and press a divot into cookie.

Remove cookie cups from muffin pan and allow them to cool completely on a cooling rack.

Combine the filling ingredients with a hand held mixer until thick.  Place in a piping bag or large zipper bag.

Pipe the filling into the middle of each cookie cup.  Making sure to fill all of the way to the top of the cookie.

Combine chocolate chips and heavy cream in a bowl.  Microwave for 30 seconds and whisk until all of the chocolate chips are melted.

Top each cookie with a small amount of ganache and spread out into an even layer.  Refrigerate until set up.
