Breakfast doesn’t have to be boring with this Banana Crumb Cake.  Loaded with mashed bananas and piled high with crumb topping, it the best way to start your day.

Begin by mashing your ripe bananas.  A potato masher is a great tool to get this done quickly.

This is what the batter will look like before you add the dry ingredients.  There might be a few clumps of butter and banana but you are on the right track.

Add the dry ingredients and pour the batter into a 9x13 pan that has been sprayed with nonstick cooking spray.

The key to a fabulous crumb topping is using a fork and not over working the mixture.  We want crumbs, not a paste.

Cover the banana batter with the crumb mixture in a thick layer.  The more crumb topping the better!
