Skillet Sausage and Cheese Biscuits

I do my weekly grocery shopping on Sunday mornings.  The significance of this being that on Sunday morning, breakfast can be a little scarce around here.  Food supplies are low or at least random and so I find myself throwing whatever we have on hand together and hoping for success.  On the morning that I first made these I had a tube of refrigerated biscuits, two cooked sausage patties and various cheeses.  Who knew that baking all of this together would end up being such wonderful goodness!  Skillet Sausage & Cheese Biscuits are a breakfast recipe keeper!

Something awesome happens when you bake cheese.  Obviously, it melts but everything also melts into it and creates flavors that you wouldn’t normally get.  The mixture of cheddar and mozzarella with the sausage is so delicious but you know what?  I can’t wait to try other flavor combinations.  How does pepper jack and cheddar with bacon sound?  I know this recipe is super simple but sometimes simple is perfectly wonderful in the very best of ways.

I baked mine in a cast iron skillet because I love it and anytime I can use it, I do {but any oven proof skillet or baking pan would work}.  Take a tablespoon of butter and spread it all over the bottom of the pan.

Although refrigerator biscuits are wonderful, so are frozen biscuits {see baking time differences in recipe below} and this time that is what I used.

The first layer is sliced cheddar cheese.  Cut each slice into quarters and then put two quarters onto each biscuit.

Take your chopped sausage and pile it high upon the cheddar cheese.

Followed by shredded cheese, I used mozzarella but you could use whatever you have on hand.

Then it is just a matter of baking.  When you use the frozen biscuits this process will take a bit longer, 25-30 minutes {refrigerated biscuits 20-25 minutes}.   It is a whole lot of melted goodness, this I can promise you!

Served with eggs and fruit, it is the perfect meal combination.  Although, they are totally tasty all on their own.  I hope you will add them to your breakfast menu today.

Frozen or refrigerated biscuits piled high with cheese and sausage, then baked to perfection.

Cook Time: 30 minutes
Total Time: 35 minutes

Ingredients

  • 8 frozen or refrigerated biscuits
  • 4 slices cheddar cheese
  • 1/2 cup chopped breakfast sausage {about 2 patties}
  • 1/4 cup mozzarella cheese {shredded}
  • 1 tbsp butter {softened}

Instructions

  • Preheat oven to 375 degrees.  Rub softened butter onto the bottom and sides of cast iron or oven proof skillet.  Place 8 biscuits into the bottom of prepared skillet.  Put 2 quarters of cheddar cheese on each biscuit.  Divide sausage evenly between the 8 biscuits and pile it on each.  Divide shredded mozzarella cheese on top of sausage.  Bake for 20-25 minutes for refrigerated biscuits or 25-30 minutes for frozen biscuits.  The biscuits will be golden brown around the edges.  Serve warm.  Store in an airtight container, refrigerated and warm in microwave for 30 seconds to warm-up.
