Memorial Day always seems like the official kick off to summer {even though it doesn’t technically start until next month}.  Summer is a favorite of mine because it means longer days, bonfires and of course…s’mores!  But why not have s’mores in a whole new way and put all of the flavors into an ice cream?  The best part is that you don’t even need an ice cream machine to make this delicious No Churn S’mores Ice Cream.  Keep scrolling to see how you can add it to your summer menu.

I have to admit that I was slightly skeptical about no churn ice cream.  I wondered how in the heck you get creamy and wonderful frozen ice cream without an ice cream maker.

What I found out was that I couldn’t get enough of this stuff.  Neither could my family!  I was instantly thinking of other flavor combinations just so that I could make it again.

It helps when you have chunks of Hershey’s chocolate bar, chunks of graham and toasted marshmallows.  Man…this ice cream is awesome!

How to make No Churn Ice Cream

In order to make No Churn Ice Cream, we need a strong base.  It is also ice cream, so it really needs to be dairy.  Heavy whipping cream to the rescue.

Start by whipping it until you have stiff peaks.  Remember this will be the base of your ice cream and it is going to hold everything together.

We want it to be thick and creamy but we don’t want to whip it so far that we get butter.

To get the sweetness that we all love, add a can of sweetened condensed milk.  Then a little vanilla extract for added flavor.

Be careful when you stir it into the cream though.  The key is to not deflate the stiff peaks, so folding {or combining gently without really stirring} the condensed milk and vanilla into the mixture is important.

After a bit of folding, you will have a super silky and creamy mixture that tastes phenomenal all on it’s own.  But you know we couldn’t stop there. 

Now onto the s’more filling ingredients.

How to Prep the S’mores Ice Cream Filling Ingredients

  • Roasted Marshmallows

Spread the miniature marshmallows out onto a silicone mat {or parchment} lined baking sheet.  Place into the oven and broil for about 2 minutes.

Or until the top of the marshmallows are golden brown and look just how you would like them when you are roasting s’mores.

Let them cool while you are preparing the rest of the ingredients.

  • Graham Crackers

I used Teddy Grahams for this S’mores No Churn Ice Cream.  I wanted to have a good graham flavor but I didn’t want it to disappear in the ice cream.

You could absolutely use regular graham crackers but the Teddy Grahams worked great.  Just chop them up into chunks.

  • Hershey’s Chocolate Bar

What is a good S’more without a Hershey’s bar?  So I took a 3 candy bars and chopped them up into various sized chunks.

It worked great to have different sized pieces because then you get a variety as you are eating the ice cream.

Add the roasted marshmallows, chopped grahams and Hershey’s bars {I reserved a few of each item for the top} to the cream mixture.  Look at all of that goodness!!

Stir the ingredients into the cream being sure to evenly distribute everything.  It is nice to get a bit of everything in every bite.

To make the chilling process go faster, I pre-chilled my loaf pan before adding the ice cream to the pan.  Then I took the extra of each item and added them to the top of the ice cream.

Cover it with Saran Wrap and freeze for 6-8 hours or until it is to the consistency that you prefer.

Then it is the best part of all…scooping and eating!  I am in love with this ice cream scoop.

No Churn S'mores Ice Cream

Everything you love about a fire roasted s'more nestled inside a no churn ice cream that is ready in no time and you don't even need an ice cream maker!

Ingredients

  • 2 cups heavy whipping cream
  • 1-14 oz. can sweetened condensed milk
  • 2 tsp vanilla extract
  • 40-50 mini marshmallows
  • 3/4 cup Teddy Grahams {chopped}
  • 3/4 cup Hershey's bar {chopped}

Instructions

  • Preheat oven to broil.
  • In a mixer fitted with a whisk attachment, whip heavy cream until stiff peaks form. Fold in the sweetened condensed milk and vanilla extract until the mixture is combined. Set aside.
  • Place mini marshmallows onto a silicone mat {or parchment} lined baking sheet. Place in the oven and broil for 2 minutes or until the top of the marshmallows are golden brown and look like they would if you were roasting them over the fire.
  • Add roasted marshmallows, along with chopped grahams and Hershey's bars {save a few of each item to add to the top of the ice cream if desired} to the cream mixture. Fold them in until they are evenly incorporated.
  • Put the mixture into a freezer proof container {chilling the container first works really great}. I used a loaf pan. Add the saved ingredients to the top and cover with plastic wrap.
  • Freeze for 6-8 hours or overnight. Serve and enjoy.
