No Bake St. Patrick’s Day Dessert

This no bake bark recipe starts with white chocolate but it is the toppings that really make it special.

What Goes Into This Recipe

  • Airhead Rainbow Bites- If you can’t find the bite sized pieces you can always buy the larger strips and cut them down.
  • Lucky Charms Clovers- It can be a bit of a pain to pull the clover marshmallows from the cereal but now they have boxes of just marshmallows.
  • Gold Coin Sprinkles- Find the gold coin sprinkles on Amazon or almost any craft store.

How to make Leprechaun Bark

1. Melt the white chocolate in the microwave for 30 seconds.  Stir and then add additional 20-30 second increments until it is totally melted and smooth. Pour the melted chocolate onto a wax paper lined baking sheet and spread it out into a 9×13 {or a little larger} rectangle.

2. Then working quickly {we don’t want the chocolate to set up}, add the rainbow candies onto the melted chocolate. Press down gently.

3. Next, add the clover marshmallows.  Being sure to press down slightly, so that it sticks into the bark.

4. Finally, add the gold coin sprinkles to the top, covering up empty spaces.  Let the bark set up at room temperature for at least 30 minutes.  Once the Leprechaun Bark is set up, begin to break it apart.  Work around the rectangle and try to break it in a way that there are at least one piece of each topping on every section.

Expert Tips

  • Be sure to not burn the white chocolate while it is melting. If you add too much time to the microwave or don’t stir it, the mixture can burn.
  • Use an off-set spatula to spread out the chocolate. It will allow you to spread it out evenly.
  • Be thoughtful when adding the toppings. Having a bit of every topping all around the bark makes it pretty. It also allows you to have everything in one piece when it is time to break it up.
  • Add the finished bark to the refrigerator to set it up quickly. Room temperature works but adding it to the cold fridge speeds up the process.
  • Give the Leprechaun Bark as a gift by adding pieces to cellophane bags and tie with ribbon. It is an easy way to give it to others.

Easy No Bake Leprechaun Bark

Ingredients

  • 6 cubes white chocolate melting wafers {melted}
  • 20-25 Airhead rainbow candies
  • 1/4 cup clover marshmallows {from Lucky Charms cereal}
  • 2-3 tbsp gold coin sprinkles

Instructions

  • Spread melted white chocolate melting wafers onto a wax paper lined cookie sheet that is about 9×13 inches in size. 
  • Begin by placing the rainbow candies on melted chocolate, being sure to work before it sets up.  Next, add the clover marshmallows and press down on them slightly.  Finally, add the gold sprinkles to fill in around the rainbow bites and clover marshmallows.  Let the bark set up at room temperature for about 30 minutes or until set up.
  • Once set up, break it apart {trying to break pieces that have a little of each candy on each piece}.  Store in an airtight container at room temperature.
