This is the same recipe that I submitted to the Lake County Examiner {our local newspaper} this week and I don’t normally do that but I thought it was the perfect time to share it.  I love football and the next few weeks are some of the best games of the season.  Go Eagles!!  Food is a necessity when it comes to watching sports.  Good, hearty food, that is easy to make and even easier to eat is important and a variety of appetizers is the way to go in my play book.  When I can make it ahead of time, than all the better.  Jalapeno Poppers are delicious in any form but if you have ever made them than you know that they are also time-consuming.  This cheese ball has all of the flavors you are looking for but with a whole lot less work.

Any good cheese ball starts with cream cheese but we couldn’t stop there…so I thought a little shredded cheese would be extra good.  The addition of pickled jalapeno’s and a few spices wrap up the actual cheese ball and then…we cover it in crispy…salty…delicious…BACON!  What could be bad about that?  Answer:  Absolutely Nothing!  A few crackers or veggies {but lets face it-we won’t be adding veggies} and bring on the big game!

  • 1/8 tsp black pepper

  • Place a large piece of plastic wrap on the counter and add the cheese mixture to the middle.  Gather the corners of plastic wrap and shape the cheese mixture into a ball.
  • Place in refrigerator for 10 minutes or until ready to serve.
  • Add chopped bacon to a large plate in an even layer.  Remove cheese ball from wrap and place on top of the bacon.  Gently roll in bacon until completely coated, you may have to use your hands to cover completely.
  • Serve on a plate with crackers or veggies and enjoy.
