I hope that all of you had a wonderful Easter!  We enjoyed a low key afternoon with family and of course, plenty of food.  The recipe I am sharing today is, Hawaiian Ham Dip and it is such a great way to use up any leftover ham you might have from the holiday {it also works well with lunch meat}.  My favorite part of the recipe {beside the fact that it is so yummy} is that the flavors remind me of Hawaii.

Maui is my very favorite place in the world and I love anything that can transport me there, even if it is just my taste buds.  I can’t quite explain just how amazing Maui pineapples are but I can never get enough.  During our last trip, my Tater, Tales and I ate so many that we lost count.  It is a perfect breakfast or snack out on the lanai overlooking the ocean.  Tropical and so tasty!!

To balance the sweetness of the pineapple I have used cream cheese as the base.  I also added a little mayonnaise and pineapple juice to get the “dip” consistency that I wanted.  I have made it with green onions mixed inside and with them on the top {almost like a garnish} and I prefer them on top but you could use them either way.  Raw onions {even the green variety} aren’t my thing.  I love them grilled, fried and sauteed but give me a raw onion on a burger and I can’t even.  Taking it off doesn’t work either…I can still taste it!  Anyone else with me on that??  Or am I crazy??

Be sure that you chop the ham down into really small pieces.

I like to go ahead and chop up the pineapple to about the same size.

Add all of the recipe ingredients into a bowl and combine.  I like to use the back of a spoon but you could make it really quick with a hand mixer.

A sprinkle of sliced green onions and it is ready to serve with your favorite cracker or vegetable.

It is such a great bite and the perfect appetizer for any occasion.  The addition of pineapple is always a welcome surprise to party goers.  The dip will be gone in no time.
