I have written about it before but St. Patrick’s Day is a big deal where I live.  The whole town gets together to celebrate because a huge majority of the population is Irish.

There is a big Corned Beef dinner, followed by an entire day of games, a parade, pub crawl and other fun things to do.

I have a lot of cake mix cookies here at Practically Homemade but this is the first one that has started with a Rainbow Chip cake mix.

How to make St Patrick’s Day Cookies with a Cake Mix:

Begin by mixing together the cake mix with the vegetable oil and eggs with a hand mixer {or by hand}.  Your batter will be a lot better if you whisk the dry cake mix before adding the other ingredients.  It helps eliminate any small lumps of dry mix in your cookie dough.

The finished dough is nice and thick with flecks of beautiful rainbow colors!

To add some extra flavor, the addition of some white chocolate chips is always a great idea.  You don’t need a large amount but be sure to mix them in by hand so that they are evenly incorporated into the dough.

Now it is time to scoop the dough out onto silicone {or parchment} lined baking sheets.  I prefer to use a cookie scoop so that I have cookies that are the same size and bake evenly.  See all of my Cake Mix Cookie Tips here.

Add a few Lucky Charm rainbow and four leaf clover marshmallows to the top of each cookie.  Press down slightly to be sure that they bake into the cookie.  I also like to add an additional white chocolate chips into the top.

Bake in a 350 oven for 9-11 minutes or until the cookies just start to turn golden brown around the edges.  The bottoms are nice and golden brown as well.

These St Patrick’s Day cookies may appear to be a little under cooked but let them cool completely on the cookie sheet and they will set up.  The heat from the pan will continue to bake them a little bit.

There is a fine line between a really great cake mix cookie and an over baked one, so being sure that you don’t over bake them is super important.

Easy St Patrick's Cookies

Rainbow chip cake mix and Lucky Charm marshmallows are transformed into super simple and extra fun cookies that are perfect for St. Patrick's Day.

Ingredients

  • 1 box Rainbow Chip Cake Mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 3 tbsp white chocolate chips {additional for top of cookies if desired}
  • 40-60 Lucky Charm marshmallows {rainbow & four leaf clovers}

Instructions

  1. Preheat oven to 350°.

  2. Combine cake mix, eggs and vegetable oil, mix until completely incorporated using a handheld mixer {or by hand}.  NOTE:  Dough will be thick. Add white chocolate chips and mix in by hand.

  3. Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a silicone or parchment lined cookie sheet. Take 3-4 marshmallows and press them into the top of each cookie.

  4. Bake for 9-11 minutes, remove from oven and let cool on cookie sheet for 10 minutes before moving them to a cooling rack.  Repeat until all of the dough is baked.

  5. Store your St Patrick's Day cookies in an air tight container at room temperature for up to 4 days.
