Any dish that I can make in one skillet is awesome in my book.  Make it super quick and you definitely have my full attention.

Using tortellini is a great option because they cook so quickly.  Plus, you have the added flavor of cheese on the inside and that is always a good idea.

5 Secrets To The Perfect Cookie

Tips & tricks to achieve the most delicious cookies of your life!

What is the Best Skillet to use?

The best skillet for a one pan meal like this is a 10 or 12 inch skillet with a high edge {like 2 inches}.  You want to find one with a lid and non stick is preferable.

Add your oil to a warm pan and cook onion until it is translucent.

Add garlic and and sliced sausage to the pan and continue cooking until the sausage is browned.  Be sure to stir because the garlic will burn if you are not careful.

Pour in the chicken stock and stir to remove any of the brown bits from the bottom of the skillet.  This is flavor and we want to get all we can from this dish.

Next, add the broccoli pieces to the skillet.

Followed by the package of tortellini.  I used frozen but you could also use fresh if it is available.

And finally, add the jar of Alfredo sauce.

Stir to combine all of the ingredients and bring mixture to a boil.

Once the mixture boils, reduce heat to a simmer.  Add the lid and continue to cook with the lid on for 7 minutes.  During that time the tortellini will cook and the broccoli will steam.

Ingredients

  • 2 Tablespoon olive oil
  • ¼ cup onion {finely minced}
  • 2 cloves garlic {minced}
  • 12 ounces sausage {in casing and sliced}-I used Italian
  • 1 cup broccoli {cut into small florets}
  • 9 ounces tortellini {frozen or fresh}
  • ¾ cup chicken broth
  • 15 ounces Alfredo sauce
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup Parmesan cheese {grated}
  • Fresh Basil for garnish-optional

Instructions

  • Heat oil over medium heat, add onion and cook until translucent. Add garlic and sausage and cook until the sausage is browned, being sure to stir so that the garlic does not burn.
  • Add chicken broth and scrape bottom of pan to release any bits of flavor. Add broccoli florets. Followed by tortellini and Alfredo sauce. Stir ingredients together and bring mixture to a boil. Once it is boiling, reduce heat to simmer and cover with lid. Cook for an additional 7 minutes.
  • After 7 minutes remove lid, add salt, pepper and Parmesan cheese. Serve warm from skillet. Garnish with fresh basil if desired and enjoy. Refrigerate leftovers for up to 3 days.

Notes

  • Frozen tortellini works; no need to thaw. Fresh tortellini cooks faster, so watch for mushiness.
  • When adding chicken broth, scrape the pan for richer flavor.
  • Add salt at the end; Parmesan brings a salty kick.
  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Freeze in an airtight container for 2-3 months. Thaw in the fridge before reheating.
