How to make Sausage Tortellini Skillet

  1. Add your oil to a large skillet that is warm  and cook onion over medium-high heat until it is translucent. Add garlic and sliced sausage to the pan and continue cooking until the sausage is browned.  Be sure to stir because the garlic will burn if you are not careful. 
  2. Pour in the chicken stock and stir to remove any of the brown bits from the bottom of the skillet.  This is flavor and we want to get all we can from this dish.

  2. Next, add the broccoli pieces to the skillet. Followed by the package of tortellini.  I used frozen but you could also use fresh if it is available.

  1. And finally, add the jar of Alfredo sauce. Stir to combine all of the ingredients and bring mixture to a boil.
  2. Once the mixture boils, reduce heat to a simmer.  Add the lid and continue to cook with the lid on for 7 minutes.  This will let the tortellini cook and the broccoli will steam. Remove the lid, add the salt, pepper and Parmesan cheese.

Expert Tips

  • If you’re using frozen tortellini, there is no need to thaw it beforehand. Toss it straight from the freezer into the pan. Fresh tortellini cooks up a bit faster, so keep an eye on it to avoid mushiness.
  • When you pour in the chicken broth, scrape the bottom of the pan with your spatula to release those flavor bits. That is such a great secret to a rich-tasting skillet.
  • Adjust the heat of the one-pot meal by using a sausage with or without spice.  Andouille sausage and hot Italian sausage will add an underlying heat to the overall flavor, while mild Italian sausage will also add a ton of flavor but not much spice.
  • Cook until you have a tender tortellini, then remove from heat.  It can easily be over cooked.
  • Hold off on adding salt until the end. Parmesan can bring a salty kick, so taste first and then sprinkle as needed.
  • Serve this tortellini recipe with a side salad and garlic bread.  It is sure to be a family favorite and a great meal for busy weeknights.

Ingredients

  • 2 Tablespoon olive oil
  • ¼ cup onion {finely minced}
  • 2 cloves garlic {minced}
  • 12 ounces sausage {in casing and sliced}-I used Italian
  • 1 cup broccoli {cut into small florets}
  • 9 ounces tortellini {frozen or fresh}
  • ¾ cup chicken broth
  • 15 ounces Alfredo sauce
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup Parmesan cheese {grated}
  • Fresh Basil for garnish-optional

Instructions

  • Heat oil over medium heat, add onion and cook until translucent. Add garlic and sausage and cook until the sausage is browned, being sure to stir so that the garlic does not burn.
  • Add chicken broth and scrape the bottom of the pan to release any bits of flavor. Add broccoli florets. Followed by tortellini and Alfredo sauce. Stir ingredients together and bring mixture to a boil. Once it is boiling, reduce heat to simmer and cover with lid. Cook for an additional 7 minutes.
  • After 7 minutes remove the lid, add salt, pepper and Parmesan cheese. Serve warm from the skillet. Garnish with fresh basil if desired and enjoy. Refrigerate leftovers for up to 3 days.
