I hope that 2019 is finding all of you well.  I am back to school and like usual, I didn’t get as much accomplished as I had hoped during break.  The list is always long and to be really honest…as much as I love to check things off, my level of enthusiasm wasn’t great.  Unless of course it included food or my kids!

I am a little in shock at the fact that I haven’t posted this recipe until now.  In the last couple of months I have made it at least a handful of times.  It is perfect for a girls night, dinner for friends or just family around the table.  The best part about the entire meal is that it is made in one pan.  I love lasagna but I don’t often make it because it can be so labor intensive.  Not to worry anymore, Easy Lasagna Skillet is delicious and has the same awesome flavors you would expect from the the original.

If you have been following my for a while then you already know my love of a good skillet meal.  On week nights it is such an easy dinner option.  To make the dish extra simple, the recipe uses jarred marinara sauce.  There really are some great options out there {Barilla is my favorite brand}.  The ricotta and mozzarella topping is what brings the entire dish together and is the element that really gives it the lasagna taste.

Start by cooking your onion until it is translucent, then add the Italian sausage and cook until it is no longer pink.  At this point you may need to drain a little fat from the mixture.

Once you have the mixture drained, add the jar of marinara sauce, water and pasta.  Stir everything together and bring it to a boil.  Once it boils, turn the temperature down to simmer and allow the sauce to cook the pasta through.  This will take between 15 & 20 minutes.

While your pasta is cooking, mix together the ricotta, mozzarella, Italian seasoning and salt.

Once the pasta is cooked, spoon the ricotta mixture over the pasta.

Cover and let the cheese warm up for about 5-7 minutes.

When finished, garnish with chopped fresh basil and Parmesan cheese.

Serve it with a side salad or piece of French bread {tune in Monday for an easy recipe}.  I am so excited to share this recipe with all of you.  A spectacular lasagna recipe in just over 30 minutes is pretty hard to beat!!

Ingredients

  • 2 tbsp olive oil
  • 1/4 large onion {chopped}
  • 1 lb Italian sausage {mild or hot}
  • 24 oz. jar marinara sauce
  • 2 1/2 cups water
  • 1/2 lb farfalle pasta
  • 15 oz ricotta cheese
  • 1/2 cup mozzarella cheese {shredded}
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt

Garnishes: Parmesan cheese and fresh basil

    Instructions

    • Add olive oil to the large skillet over medium heat and cook onions until translucent.  Add Italian sausage to onions and cook until no longer pink.  Drain any grease.  Add jar of marinara sauce, water and pasta to sausage and onions.  Stir and bring to a boil.  Once boiling turn heat down to a simmer and continue cooking for 15-20 minutes or until pasta is al dente.  While pasta is cooking, combine ricotta cheese, mozzarella cheese, Italian seasoning and salt.  Spoon mixture over cooked pasta and marinara mixture, cover and continue to cook until the cheese mixture is heated through {5-7 minutes}.  Garnish with Parmesan cheese and fresh basil.
