Now bake me a light and fluffy donut, add some delicious cinnamon crumb topping and I can’t stopping eating these babies.

The Secret Ingredient in these Crumb Cake Donuts

The secret ingredient in these baked donuts is the pancake mix.  And no…they don’t taste like pancakes.  

Using pancake mix allows you to skip a few ingredients because they are already included in the mix.  To make sure you have a smooth batter, I recommend whisking the pancake mix.  That will eliminate and lumps.

Instead of adding granulated sugar to the batter, I went with brown sugar and that was an excellent decision.  It really enhances the crumb topping.  Extra baking powder allows the donuts to be extra light and fluffy.

Once you have the dry ingredients whisked together, it is time to add the wet ingredients.  I love to add a combination of buttermilk and milk {but all milk would work too}.

Whisk an egg into the measured milk, add the melted butter and then some cinnamon.  If you want to add the cinnamon with the dry ingredients then that works too!

How to Easily Fill a Baked Donut Pan

The consistency of the donut batter will be really close to pancake batter.  Pour it into a large Ziploc bag and cut off one corner.

To fill the donut pan, pipe each donut round 2/3 full with batter.

Then turn your attention to the crumb mixture.  A combination of softened butter, brown sugar, flour and cinnamon are mixed together to just the right consistency.

The key is to not over work the crumb topping or you will get a paste instead of a crumb.

Top each donut with a hearty amount of crumb mixture.  Press down slightly to be sure it adheres to the donut when it bakes.

After about 10-12 minutes in the oven you will have wonderful and airy donuts that are pretty much perfect.

A dusting of powdered sugar is all they need.  Although a quick glaze might be nice too.

Easy Cinnamon Crumb Donut Recipe with Pancake Mix

Ingredients

Donuts

  • 2 cups pancake mix
  • 1 tbsp brown sugar {packed}
  • 1/2 cup milk
  • 1/2 cup buttermilk
  • 1 egg
  • 2 tbsp butter {melted}
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg

Crumb Topping

  • 1/4 cup butter {softened}
  • 1/2 cup brown sugar {packed}
  • 1/2 cup flour
  • 1/2 tsp cinnamon

Instructions

  • Preheat oven to 350°. Spray donut pans liberally with non stick spray and set aside.

Donuts

  • Measure pancake mix and brown sugar into a medium bowl.  Whisk to remove any lumps in the pancake mix and combine with the brown sugar. In a separate bowl combine milk and egg, whisk together and add to dry ingredients.  Add melted butter, cinnamon and nutmeg, stir to combine. The batter should be the consistency of a pancake batter.  
  • Fill donut pan by either spooning mixture into rings or filling a Ziploc bag and piping the mixture. 

Crumb Topping

  • In a small bowl combine all of the crumb mixture ingredients.  Work the mixture together into small crumbs using a fork.  Don't over work the mixture or you will get a paste and it will change the texture of the crumbs.  Sprinkle the crumbs in an even and thick layer over the top of each donut. 
  • Bake for 10-12 minutes. Remove from oven and let them cool in the pan for a 3-5 minutes before using an off-set spatula to remove the donuts from the pan. Sprinkle with powdered sugar if desired. Serve your cinnamon crumb donut warm or store in an air tight container for up to 3 days.
