How to make Chocolate Donuts with a Pancake Mix

Using pancake mix to make donuts is such a time saver.  Begin by combining the pancake mix, granulated sugar, cocoa powder and baking powder.

I like to use a whisk to get rid of any lumps in the pancake mix and get a smooth consistency.  You could always sift it instead.

To the pancake mix mixture, add the milk, sour cream, egg and melted butter.  Stir to combine.

Then add your mini chocolate chips.  Stir them into the batter until they are evenly distributed throughout the dough.

Spray your donut pans liberally with non stick spray.  The best way to get the mixture into the pans is to use a Ziploc bag or piping bag to pipe the batter into the pan.

Just spoon the batter into the bag, cut a small triangle and pipe dough in a circle around each mold.  You want to make sure they are about 3/4 full because they will rise a bit.

NOTE:  If you don’t have a bag, then just spoon the batter into each donut mold and smooth.

What can I use Instead of a Donut Pan?

If you don’t have a donut pan then no worries.  You can use a muffin pan for this recipe and even get the iconic hole in the middle by putting a crumpled up piece of parchment paper in the middle of each muffin tin before adding the batter.

Just be sure to spray the muffin pan first.

Bake in a 350 degree oven for 10-12 minutes or until donuts are cooked through.  I like to check by pressing my finger on the donut and when it bounces back then it is done.

You can also use a toothpick inserted in the thickest part of the donut and when it comes out clean they are ready.

Let them cool in the pan for a couple of minutes and turn them out of the pan and onto a cooling rack to cool completely.  If you have an area that is stuck then use an offset spatula to release that area.

How to Make the Chocolate Glaze for Chocolate Pancake Donuts

Combine the powdered sugar, cocoa, milk and corn syrup in a bowl and whisk it together until it is smooth {add more milk if the glaze is too thick}.  Dunk the cooled donuts {one at a time} into the glaze and pull it back out.

You want the glaze to be on the top half of the donut and not the bottom.

Lay them your chocolate donuts onto the cooling rack until the glaze sets up and they are ready to serve.

They are really awesome served fresh but also store well in an air tight container for a couple of days.  You can also freeze them unglazed for up to 3 months.

I have to tell you that a dozen of these babies won’t last long in a hungry household.  If you aren’t a fan of breakfast {I can’t blame you}, then serve them for dessert with a scoop of ice cream.  You can never go wrong with that.

Easy Chocolate Donuts Recipe with Pancake Mix

Pancake mix is transformed into a soft and delicious Chocolate Donut coated with chocolate glaze. Perfect for breakfast or dessert.

Ingredients

  • 2 cups pancake mix
  • 1/2 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 egg
  • 2 tbsp butter {melted}
  • 3/4 cup mini chocolate chips

Chocolate Glaze

  • 1 1/2 cups powdered sugar
  • 1/4 cup cocoa powder
  • 1 tbsp corn syrup
  • 1-2 tbsp milk

Instructions

  • Preheat oven to 350°. Spray donut pans liberally with nonstick cooking spray.
  • In a medium bowl combine the pancake mix, sugar, cocoa powder and baking powder. Whisk or sift dry ingredients to get rid of any lumps in the dry mix.
  • Add the milk, sour cream, egg and melted butter to the dry mixture and mix to combine. Add mini chocolate chips and stir until they are evenly incorporated into the dough. Spoon dough into a Ziploc bag or piping bag and cut a medium sized triangle from the end of the bag. Pipe enough dough to fill each donut mold about 3/4 full because it will rise while baking.
  • Once the donuts are cooked through {I like to press down and when it bounces back you know they are ready} remove from the oven and let them cool for a couple of minutes. Then invert them to a cooling rack to cool completely. If there is a spot where the donut is sticking to the pan then just use an offset spatula or knife to break that area loose.
  • While the donuts are cooling combine the glaze ingredients and whisk until the mixture is smooth and thin enough to dunk your donut into but thick enough to stick onto the donut. Dunk each donut halfway into the chocolate glaze and remove back to the cooling rack for the glaze to set up. Serve or store in an air tight container for a couple of days. They also freeze well for up to 3 months unglazed.
