Double Layer Holiday Fudge

I can not be the only one who is in disbelief of the fact that Christmas is in less than a week!  I have never been so far behind!  There is not a gift wrapped under the tree.  In fact, there are still a few gifts I need to buy.  Christmas cards?  No.  Baking for neighbors, friends and co-workers?  Sadly, no.  To be completely honest, we don’t even know if we are hosting Christmas Eve at our house yet.  I guess what I am trying to say is that…I am in trouble sweet friends!  The only thing keeping my list loving life together at this moment is Double Layer Holiday Fudge.  Thank goodness chocolate can solve all things.

The great news is that I will be visiting both of my kids over my winter break.  An overnight with Tales on her days off and then a quick trip to New Mexico to be with my Tater {and his favorite girl, Yuli}.  There may even be a batch of this Double Layer Holiday Fudge waiting in the freezer for delivery to my girl on Friday.  She takes after her mama when it comes to love of sweets!

Begin with the milk chocolate layer in a small saucepan.  Milk chocolate chips, sweetened condensed milk and marshmallow fluff are warmed until melted and smooth.

Then poured into a foil lined 8×8 pan.

In the same saucepan {that has been washed} begin making the white chocolate layer.  White chocolate chips, sweetened condensed milk and marshmallow fluff are again, melted until smooth.

Then holiday sprinkles are added.  NOTE:  Do not use the small round jimmie version or it will melt into the chocolate. Stir until they are evenly distributed.

Then poured over the milk chocolate layer and spread out.  Refrigerate for a couple of hours to allow fudge to set up.

When ready, it is just a matter of cutting and serving.  Plus, this will last in the fridge for a couple of weeks or in the freezer for a couple of months but lets get real.  This Double Layer Holiday Fudge is not going to last a couple of days.  This stuff is so good!!  The fact that it is simple to make and easy for a last minute dessert is extra delicious.

Double Layer Holiday Fudge

Chocolate fudge is topped with a white chocolate layer that is full of holiday sprinkles.  The perfect way to celebrate the holiday.

Ingredients

Chocolate Layer

  • 1 1/2 cups semi-sweet chocolate chips
  • 7 oz. sweetened condensed milk {or 1/2 can}
  • 2 tbsp marshmallow fluff

White Chocolate Sprinkle Layer

  • 1 1/2 cups white chocolate chips
  • 7 oz. sweetened condensed milk {or 1/2 can}
  • 2 tbsp marshmallow fluff
  • 1/4 cup holiday sprinkles

Instructions

  • Line an 8x8 square pan with aluminum foil, leaving an over hang so that you can remove fudge later.

Chocolate Layer

  • In a sauce pan combine semi-sweet chocolate chips, sweetened condensed milk and marshmallow fluff.  Over medium heat, cook until all of the chocolate chips are melted and the mixture is smooth.  Pour into prepared pan and spread into an even layer.

White Chocolate Sprinkle Layer

  • In a clean sauce pan {I usually just wash the one I use for the chocolate layer} combine the white chocolate chips, sweetened condensed milk and marshmallow fluff.  Over medium heat, cook until all of the white chocolate chips are melted and the mixture is smooth.  Remove from heat and add sprinkles. NOTE:  Do not use the small round jimmie sprinkles or they will melt and discolor the fudge.  Stir until evenly distributed and pour over chocolate layer.  Spread in an even layer.  Cover with foil and refrigerate for 4 hours or until set.  When fudge is ready, remove from pan using foil over hang, remove foil and cut into small squares.  Store in the refrigerator for 2 week or freeze for up to 3 months.
  • **Add different sprinkles for each holiday or season and enjoy fudge all year long.
