The best part about this Crock Pot Scalloped Potatoes and Ham recipe is that the options for serving it are endless.  It is perfect for breakfast or brunch because you can make it the night before and then add it in the crock pot early in the morning.  Breakfast is served!

  • Frozen hash browns: Using bagged hash browns makes this recipe such a breeze because you can put them in frozen!
  • Ham: Diced ham can be bought already diced, or you can buy ham steaks and dice them yourself.  It is one of my favorite leftover ham recipes!
  • Seasoning: Garlic powder, salt, and pepper will season the dish.
  • Cream of mushroom soup: This will give the potatoes and ham a creamy sauce and satisfying texture.
  • Milk or Heavy Cream: You can use any type of milk or heavy cream you have on hand for a rich sauce.
  • Shredded cheese: We love cheddar jack cheese or sharp cheddar cheese, but you can use whatever type of cheese you want.
  • Green onions: Green onions will be chopped over the top of your potatoes and ham to add flavor and color before serving.

Variations

You can use any type of protein that your family loves in this slow cooker meal.  Smoked sausage would be a great choice.  Bacon is always nice.  Maybe even some pepperoni. There is also the option of omitting the ham and using these au gratin potatoes as a delicious side dish.

I chose to use a bag of plain potatoes for this slow cooker recipe but a bag of the frozen potatoes with onions and peppers would be great too.

If you want to dice your own Yukon golds, russet potatoes, red potatoes or sweet potatoes then that will work, too. Just be sure to keep them all the same size either in cubes or thin slices. Keep in mind that it will probably take a little longer to cook.  To speed up the process you should stir a few times during cooking.

How to make Scalloped Potatoes and Ham in the Crock Pot

  1. Add hash browns to your crock pot that has been fitted with a plastic slow cooker liner {or sprayed with nonstick cooking spray}. Top the potatoes with diced ham, salt, black pepper and garlic salt.
  2. In a medium bowl combine cream of mushroom soup and milk {or heavy cream}, whisk the ingredients together. Pour the soup mixture over the top of the hashbrown and ham mixture.

  1. Sprinkle with shredded cheese and stir to combine. Top with the lid and cook on high heat for 2-3 hours or on low for about 4 hours.

This recipe is anything you want it to be! We love it for breakfast or brunch with one rise cinnamon rolls in the winter months. It also makes a great dinner when served with broccoli crunch salad for a complete meal.
