Cake Mix Neapolitan Cookies Recipe

How to make Neapolitan Cookies with cake mix

You will need a vanilla and strawberry cake mix for these cookies.  Mix each one up separately.

All you need to add is 1/3 cup of oil and a couple of eggs for each mix.  Remember to whisk the dry cake mix and remove any lumps because they are impossible to get rid of once the dough is made.

I prefer to use a hand mixer to combine the dough but it can easily be done by hand.

To assemble the cookies, scoop a mound of each cookie dough.  I used a small cookie scoop for this job but you could use a heaping teaspoon.

Rolling Neapolitan Cookies

To get a smooth texture on the cookies, roll each mound of dough into a smooth round.

Then take one mound of each dough {vanilla and strawberry} and roll them together.  The better you combine them into one cookie the better they will bake together.

Bake in a 350 degree oven for 9-11 minutes or until the cookies are set.  It is so important to not over bake them.

Remove them from the oven and let them cool on the baking sheet for 10 minutes.

When the cookies are cooled it is time to melt the chocolate.  I used dark chocolate melting wafers.  Start at 1 minute in the microwave, stir and add 30 second increments until your chocolate is completely melted and smooth.

How to dip Neapolitan Cookies in Melted Chocolate

Once the chocolate is melted, dip each cookie half way into it and then remove.

Place them onto a parchment {or wax paper} lined baking sheet until the chocolate sets up completely.  Once the chocolate has hardened, the cookies are ready to serve.

Cake Mix Neapolitan Cookies Recipe

Vanilla, strawberry and chocolate cookies that are made with a cake mix. These Neapolitan Cookies are easy to make and loaded with amazing flavor.

Ingredients

Vanilla Cookie Dough

  • 1 box vanilla cake mix
  • 2 eggs
  • 1/3 cup vegetable oil

Strawberry Cookie Dough

  • 1 box strawberry cake mix
  • 2 eggs
  • 1/3 cup vegetable oil

Chocolate Coating

  • 1 1/2 cups chocolate melting wafers

Instructions

  • Preheat oven to 350°.

Vanilla Cookie Dough

  • Combine vanilla cake mix, eggs and vegetable oil, mix until completely incorporated using a handheld mixer {or by hand}.  NOTE:  Dough will be thick.

Strawberry Cookie Dough

  • Combine strawberry cake mix, eggs and vegetable oil, mix until completely incorporated using a handheld mixer {or by hand}.  NOTE:  Dough will be thick.

Making Cookies

  • Using a small cookie scoop, get an even mound of each dough.  Roll each mound separately to get smooth rounds of dough. Then roll both dough mounds together in your hand, being sure to keep the cookie half and half, until you get the right shape.  Place 8 cookies on a parchment or Silpat lined baking sheet.  Bake your cookies for 9-11 minutes. 
  • Remove from oven and let them set on cookie sheet for 10 minutes.  This will allow cookies to cool and set up.  Don't skip this step, it is very important.  Continue until all of your cookies are baked. 
  • Once your Neapolitan cookies have cooled, melt chocolate wafers for 1 minute and stir.  Continue to microwave in 30 second increments until the chocolate is melted and smooth.  Dip each cookie half way into the chocolate and place chocolate covered cookie onto a parchment lined cookie sheet to set.  Store in an airtight container for up to 4 days or freeze for up to 3 months.
