I love that you can get creative with a chicken salad.  The main ingredients, chicken and mayonnaise are really just a base.  Adding elements of sweet and crunchy is a great addition to a salad that could otherwise be kind of flat.  

Summer is such a great time of year!  I love the abundance in the produce department.  Switching out the pineapple for grapes seemed like a great change up.

Not only is the color beautiful but the sweet flavor and texture is perfect in this salad.

Did you notice the secret ingredient in this recipe?  Nutmeg might seem like a strange addition to the dressing but it adds a little extra something that I think you will love.  I have always added a small amount of nutmeg to white sauces and so the same goes with this dressing.

The purpose of adding nutmeg to the dressing isn’t to necessarily taste it.  The reason it is added is to enhance the other flavors of the salad.  People don’t often think of adding it to savory dishes but used in the right amount, it can really take a dish to the next level.

When it comes to serving this Quick Chicken Salad, there are so many different options.  Piled high, on top of a toasted croissant seemed like a perfect choice but I also love it on a tomato or avocado.  I can’t wait to hear how you serve it.

Summer Chicken Salad with Grapes and Almonds Recipe

A chicken salad made for summer and filled with all of the flavors and textures you love.

Ingredients

  • 2 cups cooked chicken {cubed or shredded}
  • 20 red grapes {halved}
  • 1/4 cup slivered almonds
  • 1 stalk celery {chopped thinly}
  • 1 green onion {sliced thinly}

Dressing

  • 1/2 cup mayonnaise
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/8 tsp nutmeg {optional}
  • 1 tbsp milk

Instructions

  • In a medium bowl combine the chicken, grapes, almonds, celery and green onions.
  • In a small bowl combine the dressing ingredients and whisk until smooth. Pour dressing over the chicken salad and stir to combine. Making sure that all of the salad ingredients are completely coated.
  • Serve your chicken salad with grapes and almonds immediately or refrigerate for up to 3 days.
