If ever there was a time to be excited for a cookie recipe it is today.  When you can get all of the goodness of Chocolate Chip Cookies and Decadent Brownie recipe in one cookie it is a good day {year in fact}.

Brookie Cookies are everything that is good about the world of baking in one handheld dessert.  A soft and gooey brownie, plus a soft chocolate chip cookie in one glorious cookie combo. This is the perfect combination and by far one of my favorite desserts!

One of the things that has kept me from making Brookies in the past, is that you have to make two kinds of dough.  You also have to make sure that both are similar enough in texture to bake well together. 

Each dough needs to have the same bake time and rise to really be successful.  Using cake and brownie mixes not only speeds up the whole process but also helps achieve this task, making this brookies recipe the best around.

  • Vegetable Oil- Added for a fat element and to give them the iconic brownie texture.

4 Variations for Making Brookie Cookies

  • This recipe could also be baked into bar cookies.  Line a 9×9 baking pan with parchment paper and spray with nonstick cooking spray.  Add the brownie mixture to the bottom of the pan and then top with the cookie dough.  Bake in a 350 degree oven for 30-35 minutes or until a toothpick inserted in the center comes out with only a few crumbs.
  • Add mini chocolate chips to both the chocolate chip cookie and brownie cookie doughs for great texture on both sides of the cookie.
  • Add chopped walnuts or pecans to one or both of the cookie doughs.
  • Use a strawberry cake mix for the chocolate chip cookie dough {following the recipe as directed} for a fun fruity twist. Using sugar cookies for the cookie part of a brookie cookie would also be great.

How to make Brookie Cookies with a Cake and Brownie Mix

  1. For the cookie dough, combine yellow cake mix, flour, oil and eggs in a large mixing bowl with a hand held mixer {or stand mixer} until combined.  Add mini chocolate chips and mix until evenly distributed.
  2. For the Brownie part, combine the brownie mix, flour, oil and eggs in a separate bowl and mix with a hand held mixer {or stand mixer} until combined.

  1. To get a uniform cookie, use a medium cookie scoop and scoop chewy chocolate chip cookie dough and brownie cookie dough balls onto a silicone mat {or parchment} lined baking sheet.
  2. Then combine the two scoops of dough into one cookie.  Roll them in your hand until they are in a nice round ball that is half chocolate chip cookie dough and half brownie cookie dough.  Place them back onto the silicone mat {or parchment} lined cookie sheet.

  1. Bake in a 350 degree oven for 10-12 minutes or until the cookies are set but not over baked.  The best way to make sure you have a soft cookie is to allow the cookies to cool on the baking sheet for at least 10 minutes before moving them to a cooling rack.  
  2. Once the homemade brookies are totally cooled, all you have to do is eat and enjoy! Pro tip: Serve your brookie bars or cookies with a scoop of vanilla ice cream for the perfect sweet treat.

Expert Tips

  • Make sure that you use a cookie scoop when making the cookies.  This will not only give you an even amount of chocolate chip cookie and brownie cookie doughs but it will also ensure that the cookies bake evenly. A kitchen scale can also be used to get equal amounts of each dough.
  • Don’t bake too many cookies at one time.  I don’t suggest baking more than 6 cookies at a time because these cookies do spread a bit.
  • Pull the cookies out at 12 minutes even if you feel like they seem a bit underdone.  In order to get the wonderful soft cookies and gooey brownie textures it is so important to not over bake.  
  • Cool the cookies on the baking sheets for at least 10 minutes.  The residual heat from the baking sheet will help to continue baking the cookies and set them up perfectly.

Storage and Freezing

Store: Brookies should be stored in an airtight container {or covered with plastic wrap} either at room temperature or in the refrigerator.  They will keep longer in the refrigerator by a couple of days.

This brownie cookie recipe will last for a couple of days at room temperature and for 4-5 days if they are refrigerated.

Freeze: These Brookie Cookies will freeze wonderfully.  I would put them in a single layer on a baking sheet and freeze for a couple of hours.  After the cookies are frozen, put them into a freezer bag or a freezer safe container for up to 3 months.

Freezing them this way {individually} allows you to easily remove 1 or 2 at a time without the cookies sticking to one another.

Recipe FAQs

How do you know when the cookies are done baking?

Brookies Cookies need to be set up but not over baked.  It is important that we still have a soft chocolate chip cookie and gooey brownie.
The bake time is 10-12 minutes and that is mostly depending on your oven.  I would not bake for more than 12 minutes.  After that, remove the cookies from the oven and allow them to cool for at least 10 minutes on the baking sheet.

Do I need to use a specific brand of cake mix and brownie mix?

You can use whichever brand you prefer!

Can I substitute any other oil for vegetable oil in the recipe?

While vegetable oil is recommended, you can experiment with other neutral oils like canola oil or melted coconut oil. Keep in mind that it might slightly affect the flavor.

Can I make the Brookie Cookies in advance for an event?

Yes, you can make the cookies in advance. Follow the storage and freezing guidelines provided in the article to keep them fresh for your family gatherings.

Ingredients

Brownie Dough

  • 1 box brownie mix {fudge variety}
  • 2 Tablespoons all-purpose flour
  • 2 large eggs {whisked}
  • cup vegetable oil

Chocolate Chip Cookie Dough

  • 1 box yellow cake mix {13.25 oz. box}
  • 2 Tablespoon flour
  • 2 large eggs {whisked}
  • ½ cup vegetable oil
  • 1 cup mini chocolate chips

Instructions

Brownie Dough

  • In a large bowl add brownie mix and flour, whisk to eliminate any lumps that might be in the mix.  Add whisked eggs and vegetable oil.  Mix until well combined and set aside.

Chocolate Chip Cookie Dough

  • In a large bowl add yellow cake mix and flour whisk to eliminate any lumps that might be in the mix.  Add whisked eggs and vegetable oil.  Mix until well combined.  Add chocolate chips and mix until evenly incorporated.

Making Brookies

  • Preheat the oven to 350 degrees.  Using a medium cookie scoop, get an even mound of each dough.  Roll both doughs in your hand, being sure to keep the cookie half and half, until you get the right shape.  NOTE:  The dough might seem oily but it won't bake up that way.  Place 6 cookies on a parchment or silicone lined baking sheet.  Bake your Brookies for 10-12 minutes. 
  • Remove your brookie cookies from the oven and let them sit on the cookie sheet for 10 minutes.  This will allow cookies to cool and set up.  Don't skip this step, it is very important.  Continue until all of your cookies are baked.  Store in an airtight container at room temperature for 2 days or refrigerate for up to 4 days.  Freeze for up to 3 months.
