I have taken it upon myself to declare it Spring.  It may have snowed only a few days ago but we need some Glazed Lemon Poppy Seed Bars in our life.  For some reason a delicious lemon dessert just brightens the day.  Maybe it is the yellow color or maybe it is the sweet and sour taste but either way…I love it!  One bite and you will be transported {even for just a minute} to the warm sunshine and flowers that we are all longing to see.  Come on Spring!

These are different than a traditional Lemon Bar in the fact that they do not have a short bread crust.  In fact, the texture of these Glazed Lemon Poppy Seed Bars might just be what makes them SO awesome.  They bake up dense and soft like a brownie.  To achieve that irresistible consistency, you omit any leavening agents.  There is also very little flour in the batter.

Making the Lemon Poppy Seed Bar Batter

Zesting the lemon is the first thing that needs to happen.  I went ahead and zested the entire lemon at once using my microplane.  Doing it onto a piece of wax or parchment paper works really well.  One lemon normally generates about a tablespoon of zest.  

For the batter, combine butter, sugar, salt, eggs, lemon juice and lemon zest in a medium bowl.  Mix until all of the ingredients are incorporated well.

Add flour to mixture and mix until the flour is combined, being sure to not over mix.

Add the poppy seeds to the finished batter and mix in by hand.

Pour into a 8×8 square pan that has been sprayed with non-stick spray.  Spread out into an even layer and bake at 350 degrees for 18-22 minutes.

The edges will be browned and the middle will be set.  We don’t want to over bake these bars, the gooey brownie texture is what we want.  Let them cool.

While they are cooling, combine the glaze ingredients and whisk until incorporated.

Pour over lemon bars and spread out in an even layer.  Let it set up for at least 15 minutes.  Cut when ready {I like to use a plastic knife because the bars don’t stick to it like it can with a regular knife}.

I am telling you, if you are a lemon lover {or honestly, even if you are not} you will be in LOVE with these Glazed Lemon Poppy Seed Bars.  They are soft, flavorful and so spectacular!  I can’t get over it!  It would be no surprise to me if these became the new “traditional” Lemon Bars because in my opinion, they are better!  Now it is your turn to make them and find out for yourself.

Glazed Lemon Poppy Seed Bars

Soft lemon bars are full of poppy seeds and topped with a sweet and sour glaze.

Ingredients

  • 1/2 cup butter {softened}
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • zest from 1/2 lemon
  • 3/4 cup all-purpose flour
  • 1/2 tbsp poppy seeds

Glaze

  • 1/2 cup powdered sugar
  • 1 tbsp lemon juice
  • zest from 1/2 lemon

Instructions

  1. Preheat oven to 350 degrees.  Prepare an 8x8 square pan by spraying it with non-stick spray.  In a large bowl combine butter, sugar, eggs, lemon juice, salt and zest.  You can mix it by hand but I used a hand mixer.  Add flour and mix until just combined.  Then add poppy seeds and stir in by hand.  Pour into prepared pan and spread into an even layer.  Bake for 18-22 minutes or until edges are brown the middle is set.  Do not over bake, you want the texture to be like that of a brownie.  Let it cool.

  2. While the bars are cooling, combine the glaze ingredients and whisk them together.  Pour it over the cooled bars and spread out into an even layer over the top.  Cut into squares and serve.  Store at room temperature or in the refrigerator in an air tight container.
