Let me admit something sweet friends.  The copious amount of cookies consumed in the making of this blog has been hazardous to my jeans.  They are stretched to their limits…and I refuse to buy a bigger size.  Which sadly means that carbs are not exactly my friend.  Now that doesn’t mean that we need to break up or anything crazy like that.  It just means that a new best friend might be in order!  For that reason, Asian Turkey Lettuce Wraps sounded like a great place to start.

Asian Turkey Lettuce Wraps have a nice serving of vegetables.  They also have a fabulous and delicious ground turkey filling that is full of awesome flavor.  To amp up the filling we will add chopped mushrooms and sliced green onions.  The combination gives both an extra meaty texture and distinctive flavor.  Though it is really the sauce that takes the filling to the next level of yum.

The good news about this whole ordeal is that these lettuce wraps are fabulous!!  You will not miss the carbs.  They are  tasty, satisfying and super filling!

Chop your mushrooms and have your green onions sliced, so that they are ready to be added to the turkey.

Combine all of the sauce ingredients and stir until completely incorporated.

Brown ground turkey, then add chopped mushrooms and sliced green onions.

Once the mushrooms are softened, add the sauce mixture to the turkey.

Now we are ready for assembly.  Butter lettuce leaves, Asian turkey filling mixture, match stick carrots and slivered almonds were my choices.

The butter lettuce is the perfect vessel to hold all of the delicious toppings.

And dinner is served!!  Scratch that!  A low carb dinner is served!!

Asian Turkey Lettuce Wraps

Butter lettuce, filled with delicously Asian seasoned ground turkey, fresh vegetables and almonds.

Ingredients

Turkey Filling

  • 1 pound ground turkey
  • 6-8 button mushrooms {chopped}
  • 2 green onions {thinnly sliced}
  • 3 tbsp hoisen
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp almond butter
  • 1 tsp sweet chili sauce
  • 1 clove garlice {minced}
  • 1/4 tsp ground ginger

Wrap Ingredients

  • 12-18 pieces butter lettuce
  • 2 carrots {match stick cut}
  • 1/4 cup slivered almonds

Instructions

  1. Begin by cooking the turkey in a large pan over medium heat.  While it is browning, combine all of the sauce ingredients, hoisen, soy sauce, sesame oil, rice vinegar, honey, almond butter, sweet chili sauce, garlic, and ginger in a bowl.  Add chopped mushrooms to the turkey, the last few minutes of cooking.  After a few minutes the mushroom will start to cook down.  At this point, add the sauce ingredients and  stir.  Turn the heat down and simmer for 2 minutes.  

  2. To assemble, spoon meat mixture into the middle of lettuce and top with carrots and almonds.

Recipe Notes

  •  Substitute the ground turkey for ground beef or chicken.
  • You could also substitute romaine or iceberg lettuce leaves.
