My Darb {aka hubby…aka soulmate} is a huge red velvet fan!  It is funny…but I never remember paying much attention to red velvet before I met him and now I see recipes everywhere.  For his 40th birthday I had a surprise party for him.  If you know him then you would know that he isn’t exactly a surprise party kind of guy.  To make up for it I made sure to have all of his favorite foods.  His favorite sandwich, Golden Oreo Truffles {recipe coming next month} and Red Velvet Sandwich Cookies to name a few.  At Christmas red velvet always comes to mind because of the festive red color but they would be perfect for Valentines Day too.

Making red velvet desserts from scratch isn’t very difficult but I love to take help where I can.  The Red Velvet cake mixes not only make wonderful cakes but they make cookies too.  Just change up the amount of the ingredients added and there you have it…a Red Velvet Kiss Cookie!!  Be sure that once you add the Hershey’s Kiss to the middle of the cookie that you are giving it enough time to set up.  The Kiss will melt a bit from the heat of the cookie and if you try moving them before it hardens back up then they Kiss will fall into the cookie.  Although they are every bit as good, they aren’t quite as cute.  For other helpful tips, I head over to read my Cookie Baking Basics post.

Red Velvet Kiss Cookies

Festive Red Velvet Cookies rolled in sugar and finished with a chocolate kiss.

Ingredients

  • 1 box Red Velvet Cake Mix
  • 2 eggs
  • 1/3 cup oil
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 20-24 Hershey Kisses {unwrapped}

Instructions

  1. Preheat oven to 350 degrees.

  2. In a medium sized bowl, mix together the cake mix, eggs and oil until fully combined and no lumps remain.

  3. Roll into 1" balls, roll in sugar and place on a greased cookie sheet.

  4. Bake for 7-9 minutes or until done.

  5. Take out of the oven and let cool for the about 5 minutes before you stick the Hershey's Kiss in the center.

Recipe Notes

  • Let the Hershey's Kiss set in the cookie before you move them or it will melt into the cookie.
